Coffee Sugar Cookies

Just what the name says they are. Great for dipping in coffee.

Ingredients 

1 cup unsalted butter, softened

1 ¼ cups granulated sugar

2 eggs

1 Tbsp instant coffee granules

1 tsp vanilla

2 cups all purpose flour

3 Tbsp fresh finely ground coffee

½ tsp baking powder

½ tsp cinnamon

¼ tsp salt

Instructions

  1. In mixer cream butter and sugar

  2. In small bowl combine eggs, vanilla, and instant coffee until fully incorporated

  3. In separate bowl combine flour, ground coffee, baking powder, cinnamon, and salt

  4. Add egg mixture to butter mixture until well combined.

  5. Slowly add flour mixture until fully combined, do not over mix

  6. Separate into two parts and wrap tightly, chill at least two hours, preferably overnight

  7. When ready to bake preheat oven to 350 degrees

  8. Roll out dough on floured surface about ¼ in thick. Using 2” circle cookie cutter cut out circles and place on parchment lined baking sheet about 1” apart

  9. Bake 9-11 minutes until edges are slightly golden. Allow to cool on sheet 5 min then transfer to wire rack to cool completely.

Notes

Quantity Makes 50-60 cookies

Alternative Shaping  dough will be very sticky. For easier cutting, roll out between parchment and freeze about 10 minutes before cutting. Or form into 1” balls and flatten with bottom of a glass.

Additional Flour for less sticky dough and better cutouts and more dense cookie can add 1/2 C flour

Glaze For additional sweetness can be glazed with powdered sugar glaze
