Slow Cooker Turkey Bacon Beer Chili

Special thanks to the random people in grocery stores who helped me evolve this recipe.

Ingredients

1 pkg (1 lb) thick cut smoked bacon

1 pkg (1 1/4 lbs) ground turkey

4+ cloves garlic minced, divided in half

2-3 chipotles in adobo sauce, chopped, divided in half

2 cans tomato soup

1 can white beans, drained

1 can chili beans Medium, with liquid

1 can of corn, drained

2 bell peppers chopped ~ 1” pieces (optional)

1 sm (6oz) can tomato paste

2 Tbsp chili powder

1⁄2 Tbsp garlic powder

1⁄2 Tbsp ground cumin

1 pinch allspice

1 can of beer of choice

“pinches” of salt, ground black pepper, and red pepper flakes to taste

Extras & Garnish

Fritos (mandatory)

Sharp cheddar cheese, grated

Sour cream

Instructions

  1. Prepare half garlic and half chipotle peppers and set aside

  2. Crisp bacon in a large frying pan. Remove the bacon onto plate with slotted spoon/spatula, leave the bacon fat in the pan

  3. Add turkey to pan of bacon fat and brown, once turkey begins to brown add half minced garlic and chipotles. Drain.

  4. Assemble all ingredients in slow cooker and mix

  5. Cover and cook on high for 4 hours or medium for 8 hours.


Notes

Garlic Measure with your heart

Chipotle Chilis also measure with your heart based on heat preferences, take care when chopping and handling they will stain

Beer Alternative If desired replace beer with 12oz chicken broth or similar liquid that you prefer

Storage Freezes well
